Ingredients
2 eggs, 1/4 cup button mushrooms, 3 garlic cloves, grated mozzarella cheese, 1 onion, 1/4 capsicum, 1/4 tsp salt, 1 green chilli, 1/8 tsp turmeric, 1 tbsp oil, 1 pinch cumin seeds, 1/8 tsp black pepper, 2 tbsp coriander leaves
Step 1
Start by rinsing onions, green chillies and bell peppers. Thinly slice the bell peppers and mushrooms, finely chop the green chillies and rinse the coriander leaves under running water.
Step 2
Now, crack open the eggs in a bowl and sprinkle salt, turmeric and pepper. Beat until frothy and keep it aside. Heat oil in a pan and add cumin, allow the seeds to splutter and stir finely chopped green chillies and garlic.
Step 3
Saute the garlic mixture for 30-40 seconds and stir in mushrooms, bell pepper and onions.Cook the mixture on high heat until roasted and add coriander leaves to the mixture. Mix everything and remove to a small plate.
Step 4
In the same pan, stir the oil and reduce the flame to medium. Pour the beaten eggs and cook until the eggs are almost set. Spread the roasted onions and mushrooms mixture evenly. Flip and cook the other side until the eggs are cooked properly.
Step 5
Once both sides of the onions are cooked to perfection and crisp, sprinkle fried herbs for a delightful taste. Add the grated mozzarella cheese and cook until the cheese is melted. Serve a mushroom cheese omelette with toasted bread for a delightful breakfast. Enjoy!
