Gond ke laddoo are a winter favourite in Indian households, relished for their rich flavour, energy-boosting properties and immune-boosting benefits. These wholesome laddoos combine edible gum (gond), jaggery, wheat flour, nuts and ghee to create a delightful treat that not only satisfies sweet cravings but also helps keep the body warm during chilly weather.
What is Gond?
Gond, or edible gum, is a natural plant-derived substance obtained from the sap of trees, primarily the Babul tree (Acacia arabica). Widely used in Indian sweets like laddoos and panjiri, gond is known for its medicinal properties. It helps keep the body warm in winter and provides a boost of strength and stamina.
Ingredients:
6 tbsp ghee, ½ cup gond (edible gum), 2 tbsp cashew nuts, 2 tbsp almonds, 2 tbsp raisins, 1½ cups dry coconut, 2 tbsp poppy seeds, ¾ cup dried dates, ¼ tsp cardamom powder, ¼ tsp nutmeg powder, 1 cup jaggery, 2 tbsp water
Step 1
Heat ¼ cup ghee in a pan on low flame. Add ½ cup gond and fry until it puffs up and turns golden brown. Remove and set aside. Once cooled, crush the fried gond using your hands or a rolling pin.
Step 2
In the remaining ghee, fry cashew nuts, almonds, and raisins until golden brown. Transfer to a bowl. Dry roast grated coconut until aromatic and transfer it to the same bowl. Lightly toast poppy seeds until they pop and add them to the mix.
Step 3
Grind seedless dried dates into a coarse powder using a mixer. Roast the dates powder in 2 tbsp ghee on low flame until it turns golden. Add this to the bowl. Sprinkle cardamom powder and nutmeg powder over the roasted ingredients and mix well.
Step 4
In a separate pan, melt the jaggery with 2 tbsp water over medium heat. Cook until it reaches a one-string consistency. Pour the jaggery syrup over the prepared mixture and mix thoroughly while the syrup is hot.
Step 5
Grease your hands with ghee and shape the mixture into laddoos. Store the laddoos in an airtight container for up to a month. Enjoy as a warm and nourishing winter treat!
Tips
Always use fresh and good-quality edible gum. Check for any impurities or discolouration in the gond before frying. Fry gond on low to medium heat to ensure it puffs up evenly without burning. Overheating can result in a bitter taste.
