Medu Vada
This delightful South Indian’s special Medu vada is not only crispy but fluffy as well. Prepped with a refreshing blend of lentils, green chillies and spices, start by soaking dal for at least 5 hours and grind into a smooth batter with pepper, cumin, green chillies and onions. Prepare a coarse paste and take small portions of batter and make a hole in the centre. Slide a small amount of batter into the hot kadhai and fry until golden. Serve with sambhar or chutney and enjoy.
Macher Teler Bora
This popular Bengali vada is prepped with a combination of gram flour and spices. All you need to do is combine fish oil with ginger-garlic paste, green chillies and cumin powder. Add water to make a smooth and thick batter and drop small portions of batter into hot mustard oil and fry until golden and crispy. Serve with any favourite chutney of your choice and enjoy.

Sabudana Vada
Sabudana vada is one of the most preferred vadas during fasting. Made with tapioca pearls, roasted peanuts, herbs and boiled potatoes, you can easily prep this gluten-free and vegan snack at home by soaking the sago pearls first. Batata Vada
