Ingredients required to make Chicken Mushroom Quiche –
Chicken Filling:
1 tbsp oil
1 tsp Green onion (White part) chopped
1 cup Mushroom
1 cup Chicken small cubes
1 tsp Black pepper powder
Salt to taste

Sauce:
1 Egg
1/2 cup Cream
1/2 tsp Dried oregano
1/2 tsp Black pepper powder
1/2 tsp Red chilly flakes

Short Cut Pastry: –
1 cup All-purpose flour (sifted)
60 grms Butter (chilled, cubes)
1/4 tsp Salt
1/4 tsp Sugar
6 tbsp Milk

Method to make Chicken Mushroom Quiche –
For Chicken Filling: –
In a frying pan, add oil and onion.
Mix well and sauté until translucent.
Add chicken and mix well until it changes colour.
Add mushroom with black pepper powder and salt.
Mix well and cook for 2-3 minutes & let it cool down.
For Sauce:
In a bowl, add eggs, cream, red chilly flakes, dried oregano, black pepper powder, and whisk well & set aside.
For Shortcut pastry: –
Add all-purpose flour and butter.
Add salt, sugar and mix till crumbly.
Gradually add milk, bring together and knead until dough is formed.
Cover with cling film and refrigerate for 30 minutes.
Sprinkle flour on dough and roll out dough with the help of a rolling pin.
Cut into rough shape with the help of the cutter.
Grease muffin or cupcake tray with cooking oil, place rolled dough, and set and prick with a fork (10-12).
Bake in preheated oven at 200°C for 5 minutes, then take out from the oven and rest for 5 minutes.
Add the cooked chicken filling and prepared egg+cream mixture on half-cooked pie shells.
Bake in a preheated oven at 180 C for 20-25 minutes.
Garnish with red chilly flakes and coriander leaves.
