1 cup paneer, 2 tbsp onion greens, 1 small onion, 1 green chilli, ½ tsp cumin powder, ½ tsp chaat masala, ½ tsp black pepper powder, salt to taste, 2 tbsp fresh coriander leaves

In a large mixing bowl, combine jowar atta, wheat flour (if using), and salt. Gradually add water and knead into a smooth and pliable dough. Cover and let it rest for 15 minutes.

In a separate bowl, mix crumbled paneer, onion greens, chopped onion, green chilli, cumin powder, chaat masala, black pepper, salt, and coriander leaves. Combine well to make a uniform stuffing.

Divide the dough into equal-sized balls. Roll out a dough ball into a small disc, dusting with flour if necessary. Place a portion of the stuffing in the centre, gather the edges, and seal the dough around the filling. Gently roll it out into a paratha, being careful not to tear it.

Heat a tawa (griddle) over medium heat. Place the rolled paratha on the hot tawa and cook until bubbles appear on the surface. Flip the paratha, drizzle ghee or oil around the edges, and cook until golden brown spots appear.
