Ingredients
  • 2.5 cups pearl millet flour
  • 1 cup water
  • 1 tsp oil
  • Salt as required

Method
  • Start by heating a pan and add water along with oil and salt. Stir bajra flour into the boiling water and stir it with the help of a spoon. When the mixture is lukewarm or fine to handle, knead it into a smooth and soft dough.
  • If the dough becomes sticky, then add flour and allow it to rest for some time. Heat tawa and prepare medium-sized balls from the dough. Take a dough ball and flatten it slightly with the palms. Dust lightly with flour on both sides and use a parchment paper.
  • Place the dough ball between two parchment sheets and with the help of a rolling pin, roll gently to a flat round shape, remove gently and place the rolled roti on the hot tawa.
  • Cook both sides until you see brown spots and done on a medium-high flame and once one side is partly cooked, flip and cook for the second side. Flip a few times for even roasting of the roti and once you see the brown spots on both sides.
  • When roasted well enough, remove and spread a bit of oil or ghee on one side. Make bajre ki roti in batches and stack them up in a roti basket. Serve with tangy lehsun chutney and enjoy!
