Hailing straight from the heart of Tamil Nadu, Samai, also referred to as Little millet, is mixed with Mudakathan keerai or Balloon vine, a wild creeper commonly found on the sides of the roads. The mudakathan leaves are known for their anti-inflammatory properties. From being rich in antioxidants to aiding fever, the leaves were traditionally used to alleviate joint pain.

Give your ordinary dosa a hint of mudakathan keerai (leaves) for a power-packed breakfast. The breakfast is loaded with immense health benefits including protein, fibre, vitamins and nutrients, the millets are deemed to control high blood sugar levels and maintain stable energy levels.

Samai Mudakathan Dosai

Ingredients
  • 1 cup samai (little millet)
  • ¼ cup grated coconut
  • 1/3 cup mudakattan keerai
  • 1 tsp salt

Method

Step 1: Start by soaking the little millet or samai in water for 2 hours. In the meantime, wash mudakathan keerai nicely and drain the excess water.

Step 2: Next, in a mixie jar, add soaked samai and coconut scrapings to it. Grind into a coarse paste. Stir chopped keerai into the mixie jar and blitz into a smooth paste again.

Step 3: Pour the coconut-mudakathan batter into the soaked samai or little millet. Ensure that the batter is watery like neer dosai.

Step 4: Now, heat a tawa and smear a tbsp of oil. Pour a ladleful of dosai batter and cook until the edges of the dosai start curling.

Step 5: Cook both sides properly and slide the dosai batter onto a serving plate. Repeat the step for the remaining dosai batter, serve and enjoy.
