This delightful side dish is served widely in almost every other South Indian home and is nothing less than a staple. This South Indian dish features a rich amalgamation of red chillies, tamarind, unripe tomatoes, ripe tomatoes and more.

500g ripe tomatoes, 3 tbsp Kashmiri chilli powder, 1 tbsp oil, ¼ tsp mustard seeds, 1 tbsp ginger, mustard powder, jaggery, salt, turmeric, methi seeds powder, 2 tbsp oil, mustard seeds, curry leaves, ginger, hing

Start by heating 1 tbsp oil in a pan and add ¼ tsp mustard seeds along with 1 tbsp of finely chopped ginger. Allow the ginger to fry until fragrant. Ensure that the ginger is fried properly without burning.

Stir the chopped tomatoes and salt into the pan and allow it to heat for about 2-3 minutes. Cook covered on high heat for 2-3 minutes until the tomatoes have softened completely.

Remove the lid and cook until the juices evaporate and the tomato mixture turns thick. Stir in jaggery, red chilli powder, turmeric and roasted methi powder. You can also skip methi and mustard if you wish to.

Taste test the mixture and now prepare the tempering for the thokku. All you need to do is heat oil in a medium pan and add mustard seeds and half tbsp of ginger or garlic. Allow the ginger to turn fragrant and stir curry leaves into the mixture.

Lastly, add hing for a delightful taste and pour the tempering over the tempering over the tomato thokku for a smoky yet delicious taste. Mix evenly and allow it to cool completely.

Tomato thokku usually tastes better after storing it for a day in a glass jar. Store in a glass jar and you can also refrigerate for a couple of months. Serve with parotta or any curry of your choice and enjoy!
